Update wordmark logo to new RubyUI brand

Updates the RubyUI wordmark to the new brand mark (red symbol #b32328).

  • Swaps docs/app/assets/images/logo.svg (light) and logo_dark.svg (dark). This updates the navbar, mobile menu, error pages and mailer at once, no code changes.
  • Adds a theme-aware logo to the top of the README using <picture> (light/dark variants swap with the reader's GitHub theme).

Pairs with #464 (favicon).
