docs(release): show OpenSearch in the /versions example response

Description

The /versions example response in the release process page still showed the Vespa image for index. Onyx no longer uses Vespa. The endpoint now reports the OpenSearch image (onyx-dot-app/onyx#15336).

Changes:

  • Set index to opensearchproject/opensearch:3.6.0 in all three variants (stable, dev, migration).
  • Set nginx to nginx:1.25.5-alpine, the value the endpoint returns now.
  • Fix the example JSON. It had a misplaced closing brace after stable and an extra brace at the end. The example now parses as valid JSON.

Testing

  • Parsed the new example block with json.loads to confirm that it is valid JSON.
  • Compared the values with backend/onyx/server/manage/get_state.py on the Onyx PR branch.
