Summary by cubic

Flips the Docs plugin's AI, OCR, and inbound-email switches from opt-in to on-by-default, so fresh deployments get the full pipeline without extra env setup.

  • GAUZY_DOCS_AI_ENABLED and GAUZY_DOCS_OCR_ENABLED now default to true, but AI stages and OCR still only run when an AI provider with credentials is registered.
  • GAUZY_DOCS_INBOUND_EMAIL_ENABLED now defaults to true; deliveries without a valid HMAC signature or per-address relay secret are still rejected.
  • Updates README.md and config/constant comments to reflect the new defaults.
